Winter Cusine

Visitors are amazed at the variety of dishes that Granada and its county offer during this winter time mainly because during the rest of the year southern dishes such as gazpacho and pescaito frito (fried fish) tae over as in a monopoly. Every year on the 17th century of January people get together to enjoy with their friends and family the Olla de San Antón- an exceptional dish, most suitable to eat during this cold season. Long ago it would be cooed in the middle of the country as people sang and celebrated this time with a glass of home made wine. There is more to winter cuisine than Olla de San Antón though. A wide variety of dishes can be tasted in many of Granada´s homes as well as in some restaurants. The most popular ones are Andrajos, Gurullos, Gurupinas, Potaje de Cardos (Thistle stew), a whole variety of Cazuelas (Casserole) with green peppers or noodles, Sopas Pimentones (Cayenne pepper soup), Sopas Amarillas con Uvas (Yellow soup with grapes), Espárragos Trigueros (Asparagus), Perdiz con Albóndigas (Partridge with meatballs), Pimentón con sardines (Cayenne pepper with sardines), Sopas Colorás (Red soup), Gachas picantes o dulces (Sweet or spicy gachas) and a whole lot more that surprises the visitor and makes the choice more difficult.

In between pig- killing and hunting: This is the season of traditional dishes such as migas seasoned with all kinds of pork products: morcilla de cebolla (onion blood sausage), morcilla de calabaza (pumpkin blood sausage), chorizo (Spanish style pepperoni), longaniza (long pork sausage), salchichón cocido (cooked Spanish salami), pork cheese,.

Pig killing was once a private event in which a whole family would carry out the whole process. Nowadays however, some villages carry it out as a public spectacle for all to enjoy it. These meeting are also a good opportunity to taste the hand made wines that get ready to be drunk around this time of the year. Every town and village proudly offers its wine as the best one in the area. These craft wines are also enjoined when accompanied by great seasonal meals such as hare with hazelnuts and partridge with mushrooms.
